  • 3 cups shredded chicken (from a rotisserie chicken or homemade)
  • 4 cups shredded cheese (Oaxaca, Monterey Jack, or Mexican blend)
  • 6 large flour tortillas
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté diced onion and bell peppers until softened (8–10 minutes).
  2. Add shredded chicken and seasoning mix to the skillet with ¼ cup water. Cook until thickened (3–4 minutes) and transfer to a bowl.
  3. Heat ½ teaspoon olive oil in the skillet. Place one tortilla in the skillet, layer half with cheese, add chicken mixture, top with more cheese, and fold.
  4. Cook until golden brown on each side. Repeat with remaining ingredients.
