  • 1 tablespoon kosher salt
  • 2 tablespoons butter (divided)
  • 1 pound raw medium shrimp (peeled and deveined)
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon Old Bay seasoning
  • 1 tablespoon minced garlic
  • 2 cups heavy cream
  • ½ cup Parmesan cheese (shredded)
  • ½ cup Asiago cheese (shredded)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 425°F.
  2. Rub the potatoes with olive oil and salt; place them on a parchment-lined baking sheet. Bake for 50-60 minutes until tender.
  3. In a frying pan, melt one tablespoon of butter over medium heat. Cook the shrimp for about two minutes per side until pink, then season with Cajun and Old Bay seasoning.
  4. In the same pan, melt the remaining butter and sauté garlic for one minute. Stir in heavy cream, bring to a simmer, then mix in cheeses and lemon juice until smooth.
