- 1–1½ pounds extra large shrimp (with shells)
- 1 teaspoon Creole seasoning
- ¼ teaspoon salt (to taste)
- 1–2 teaspoons butter or olive oil
- 1 stalk celery (roughly chopped)
- ½ onion (roughly chopped)
- 2–3 cloves garlic (smashed and peeled)
- 2 tablespoons flour
- ½ cup dry white grape juice or stock
- 2–2½ cups shrimp stock
- 1 cup heavy cream
Instructions
- Rinse the shrimp under cold water. In a large pot, combine shrimp shells, Creole seasoning, salt, enough water to cover, celery, onion, garlic, and bay leaves. Bring to a boil over medium heat.
- Reduce heat and simmer for about 30 minutes. Strain the stock into another pot.
- In the same pot, melt butter over medium heat. Sauté garlic, onions, and celery until softened.
- Sprinkle flour over sautéed vegetables; stir for about a minute. Gradually add grape juice or stock while stirring until smooth.
- Pour in strained stock along with Worcestershire sauce, tomato paste, paprika, cayenne pepper (if using), and stir well; bring to a gentle boil.
- Lower heat; gradually mix in heavy cream while stirring continuously. Simmer for an additional 10 minutes until slightly thickened.
- Serve warm garnished with fresh herbs if desired.
