  • 3 medium courgettes (zucchini), sliced into half-moons

  • 1 can (15 oz) butter beans (drained and rinsed)

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 can (14 oz) chopped tomatoes

  • 1 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • ½ tsp smoked paprika

  • ½ tsp chili flakes (optional, for gentle heat)

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • ½ cup vegetable broth or water

  • Juice of ½ lemon

  • Fresh basil or parsley for garnish


Instructions

Step 1: Prep the Vegetables

  1. Wash and slice the courgettes into thick half-moons.

  2. Chop the onion finely and mince the garlic.

Step 2: Sauté Aromatics (Optional but Recommended)
3. In a skillet over medium heat, add 1 tbsp olive oil.
4. Sauté the onion for 3-4 minutes until soft and translucent.
5. Add garlic and cook for 1 more minute until fragrant.
6. Stir in the tomato paste and smoked paprika. Cook for another minute.

Step 3: Load the Slow Cooker
7. Transfer the sautéed mixture to your slow cooker.
8. Add chopped tomatoes, drained butter beans, courgettes, thyme, oregano, chili flakes (if using), and vegetable broth.
9. Season with salt and pepper. Drizzle in the remaining 1 tbsp olive oil.
10. Stir everything together to combine well.

Step 4: Cook Low & Slow
11. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the courgettes are tender and the beans are soft and creamy.
12. Check seasoning and adjust with more salt, pepper, or herbs as needed.

Step 5: Finish & Serve
13. Squeeze in fresh lemon juice to brighten the flavors.
14. Garnish with chopped fresh basil or parsley.
15. Serve warm with crusty bread, cooked grains, or on its own as a hearty bowl.
