For the Slow Cooker Beef:

  • 1 ½ lbs beef chuck roast or sirloin, thinly sliced

  • 1 tbsp cornstarch

  • 1 tbsp olive oil

  • 1 medium onion, sliced

  • 4 cloves garlic, minced

  • 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)

  • ½ cup low-sodium soy sauce

  • ¼ cup hoisin sauce

  • ¼ cup brown sugar

  • 2 tbsp rice vinegar or apple cider vinegar

  • 3 cups beef broth (low-sodium recommended)

  • 1 tbsp sesame oil

  • ½ tsp crushed red pepper flakes (optional for heat)

For the Noodles & Add-Ins:

  • 4 packs instant ramen noodles (discard seasoning packets)

  • 1 cup shredded carrots

  • 1 red bell pepper, thinly sliced

  • 2 green onions, sliced

  • 1 tbsp sesame seeds (optional for garnish)

  • Fresh cilantro or basil for garnish (optional)


Instructions

Step 1: Prep and Brown the Beef (Optional but Recommended)
Toss sliced beef with cornstarch in a bowl to coat.
Heat olive oil in a skillet over medium-high heat and brown beef in batches for 2–3 minutes per side.
This adds extra flavor, but you can skip this step if short on time.

Step 2: Load the Slow Cooker
Add browned beef (or raw beef if skipping browning), onion, garlic, and ginger to the slow cooker.
Pour in soy sauce, hoisin sauce, brown sugar, vinegar, beef broth, sesame oil, and red pepper flakes.
Stir to combine all ingredients well.

Step 3: Slow Cook the Beef
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the beef is very tender.
Shred or break apart the beef using two forks.

Step 4: Cook the Ramen Noodles
About 15 minutes before serving, cook ramen noodles in boiling water according to package instructions (usually 3–4 minutes).
Drain and set aside.

Step 5: Combine Noodles & Veggies
Stir shredded carrots and bell pepper into the slow cooker.
Add the cooked ramen noodles and toss gently to coat with the sauce and distribute ingredients evenly.
Let sit for 5 minutes to allow noodles to absorb flavor.

Step 6: Garnish and Serve
Spoon into bowls and top with green onions, sesame seeds, and fresh herbs if desired.
Serve hot and enjoy the rich, savory broth clinging to every noodle and bite of beef.

Notes

Slice Beef Thin – For quicker cooking and tender results.
Don’t Overcook Noodles – Cook them separately and add last to avoid sogginess.
Add Greens – Toss in baby spinach or bok choy just before serving for a nutritional boost.
