Ingredients
- 1 white onion (diced)
- 4 cloves garlic (minced)
- 2 tsp Italian seasoning
- 6 cups chicken stock
- 2–3 boneless skinless chicken breasts (about 1 pound)
- 1/2 cup sun-dried tomatoes (chopped)
- 4 cups fresh spinach
- 1 cup heavy cream
- 8 oz broken lasagna noodles (cooked separately)
Instructions
- In a slow cooker, combine diced onion, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Pour in chicken stock and stir.
- Add chicken breasts and top with chopped sun-dried tomatoes.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Shred the chicken with two forks and return it to the slow cooker.
- In a bowl, whisk together heavy cream and cornstarch until smooth then add it to the slow cooker.
- Cook on high for an additional 30 minutes.
- Stir in fresh spinach until wilted.
- Just before serving, mix in cooked lasagna noodles.
