For the Focaccia Dough:

  • 3¾ cups all-purpose flour

  • 1 packet (2¼ tsp) active dry yeast

  • 1½ tsp salt

  • 2 tbsp granulated sugar

  • 1¼ cups warm water (about 110°F)

  • ¼ cup whole milk (or plant-based milk)

  • ¼ cup olive oil

  • 1 tsp vanilla extract

For the Topping:

  • ½ cup raspberry jam (or homemade raspberry preserves)

  • 2 tbsp brown sugar

  • 2 tbsp olive oil (for drizzling)

  • 1 tsp cinnamon (optional)

  • Flaky sea salt (a pinch for contrast)


Instructions

Step 1: Prepare the Dough

  1. In a large bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until frothy.

  2. Add milk, olive oil, and vanilla extract. Stir to combine.

  3. Mix in flour and salt. Stir until a sticky dough forms.

  4. Knead on a lightly floured surface or in a mixer with a dough hook for 8-10 minutes until smooth and elastic.

  5. Transfer to a greased bowl, cover with a towel, and let rise for 1½ to 2 hours, or until doubled in size.

Step 2: Shape and Second Rise

  1. Drizzle 1 tbsp olive oil into a 9×13 inch baking pan and spread evenly.

  2. Punch down the dough and transfer it to the pan.

  3. Use your fingers to stretch and dimple the dough to fill the pan.

  4. Cover loosely and let it rise again for 30-45 minutes until puffy.

Step 3: Add the Topping

  1. Preheat your oven to 400°F (200°C).

  2. Using your fingers, re-dimple the surface slightly.

  3. Drop spoonfuls of raspberry jam across the dough.

  4. Drizzle with 1 tbsp olive oil, sprinkle brown sugar and cinnamon evenly over the top.

  5. Add a pinch of flaky sea salt to balance the sweetness.

Step 4: Bake the Focaccia

 

  1. Bake for 20-25 minutes, or until golden brown and the edges are crisp.

  2. Let cool slightly in the pan before slicing.

  3. Serve warm or at room temperature.

Notes

Use Good Quality Jam – A thick, flavorful jam or preserve makes all the difference.
Don’t Overload with Toppings – Too much jam can cause sogginess; less is more.
Dimple Deeply – This creates beautiful texture and helps hold the jam.
Don’t Skip the Salt – A small sprinkle of flaky salt enhances the sweetness.
Store Properly – Keep it in an airtight container at room temp for up to 2 days.
