-
1 packet (2¼ tsp) active dry yeast
-
1½ tsp salt
-
2 tbsp granulated sugar
-
1¼ cups warm water (about 110°F)
-
¼ cup whole milk (or plant-based milk)
-
¼ cup olive oil
-
1 tsp vanilla extract
For the Topping:
-
½ cup raspberry jam (or homemade raspberry preserves)
-
2 tbsp brown sugar
-
2 tbsp olive oil (for drizzling)
-
1 tsp cinnamon (optional)
-
Flaky sea salt (a pinch for contrast)
Instructions
Step 1: Prepare the Dough
-
In a large bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until frothy.
-
Add milk, olive oil, and vanilla extract. Stir to combine.
-
Mix in flour and salt. Stir until a sticky dough forms.
-
Knead on a lightly floured surface or in a mixer with a dough hook for 8-10 minutes until smooth and elastic.
-
Transfer to a greased bowl, cover with a towel, and let rise for 1½ to 2 hours, or until doubled in size.
Step 2: Shape and Second Rise
-
Drizzle 1 tbsp olive oil into a 9×13 inch baking pan and spread evenly.
-
Punch down the dough and transfer it to the pan.
-
Use your fingers to stretch and dimple the dough to fill the pan.
-
Cover loosely and let it rise again for 30-45 minutes until puffy.
Step 3: Add the Topping
-
Preheat your oven to 400°F (200°C).
-
Using your fingers, re-dimple the surface slightly.
-
Drop spoonfuls of raspberry jam across the dough.
-
Drizzle with 1 tbsp olive oil, sprinkle brown sugar and cinnamon evenly over the top.
-
Add a pinch of flaky sea salt to balance the sweetness.
Step 4: Bake the Focaccia
-
Bake for 20-25 minutes, or until golden brown and the edges are crisp.
-
Let cool slightly in the pan before slicing.
-
Serve warm or at room temperature.
Notes
Use Good Quality Jam – A thick, flavorful jam or preserve makes all the difference.
Don’t Overload with Toppings – Too much jam can cause sogginess; less is more.
Dimple Deeply – This creates beautiful texture and helps hold the jam.
Don’t Skip the Salt – A small sprinkle of flaky salt enhances the sweetness.
Store Properly – Keep it in an airtight container at room temp for up to 2 days.
