- 1 1/2 lbs chuck roast or chuck steak, cubed
- 1/4 cup all-purpose flour
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon pepper
- 2 onions, diced
- 2 carrots, chopped
- 1 (28 oz) can Italian diced tomatoes, undrained
- 2 cups beef or vegetable broth
- 2 tablespoons olive oil
- 1 1/2 tablespoons Worcestershire sauce
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine flour, smoked paprika, garlic powder, salt, and pepper. Toss the cubed beef in this mixture until well-coated.
- Heat olive oil in a large stockpot over medium-high heat. Add the beef cubes and brown on all sides. Remove and set aside.
- In the same pot, reduce heat to medium and sauté diced onions and chopped carrots until softened.
- Return the browned beef to the pot and add the undrained diced tomatoes, broth, and Worcestershire sauce.
- Cover the pot and place it in the oven. Cook for about 2 ½ to 3 hours or until the beef is tender at an internal temperature of 165°F.
- For a thicker gravy (optional), mix cornstarch with water and stir into the sauce before serving.
- Serve hot over rice or noodles with plenty of gravy.
