Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the unsweetened applesauce, granulated sugar, and eggs until well combined.
  3. In another bowl, mix the all-purpose flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually fold the dry mixture into the wet mixture and add grated carrots, shredded coconut, nuts (if using), vanilla extract, and crushed pineapple. Mix until just combined.
  5. Prepare your baking pans by lightly greasing them or lining with parchment paper.
  6. Pour the batter into prepared pans and bake: approximately 35–40 minutes for larger pans or 25–30 minutes for smaller ones. Check doneness with a toothpick.
