Ingredients
For the Turkey Sausage Gravy:
• 1 lb ground turkey sausage
• 2 tbsp butter
• 2 tbsp all-purpose flour
• 2 cups milk (dairy or plant-based)
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp salt (adjust to taste)
• ½ tsp ground black pepper
• Optional: ¼ tsp crushed red pepper flakes for heat
For the Biscuit Topping:
• 2 cups all-purpose flour
• 1 tbsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 6 tbsp cold unsalted butter, cubed
• ¾ cup buttermilk (or milk + 1 tsp vinegar, mixed and rested for 5 mins)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Lightly grease a 9-inch pie dish or baking dish and set aside.
Step 2: Cook the Turkey Sausage
In a large skillet over medium heat, cook the turkey sausage until browned and cooked through.
Break it into crumbles as it cooks. Once browned, reduce heat to low.
Step 3: Make the Gravy
Add butter to the skillet with the sausage and let it melt.
Sprinkle in the flour and stir to coat the meat, cooking for about 1 minute.
Gradually whisk in the milk, stirring constantly to avoid lumps.
Add garlic powder, onion powder, salt, pepper, and optional red pepper flakes.
Simmer for 4–6 minutes until thickened. Remove from heat and set aside.
Step 4: Prepare the Biscuit Topping
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Pour in the buttermilk and stir just until combined—do not overmix. The dough should be slightly sticky.
Step 5: Assemble the Pie
Pour the turkey sausage gravy into the prepared dish.
Drop spoonfuls of biscuit dough evenly over the top, spreading gently to cover most of the surface (some gaps are okay for steam to escape).
Step 6: Bake Until Golden
Bake for 22–26 minutes, or until the biscuit topping is golden brown and cooked through.
A toothpick inserted into the biscuit should come out clean.
Step 7: Cool Slightly & Serve
Let the pie cool for 5 minutes before serving.
Spoon into bowls and enjoy warm.
