  • 1 lb ground chicken
  • 9 oz box of gluten-free lasagna sheets
  • 36 oz marinara sauce
  • 16 oz mozzarella cheese (shredded)
  • 15 oz ricotta cheese
  • 8 oz parmesan cheese (shredded)
  • 1 egg
  • Fresh parsley, for flavor

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a deep 9 x 13 x 3" baking dish with nonstick spray.
  3. Cook the gluten-free lasagna sheets according to package instructions until al dente. Drain and set aside.
  4. In a large skillet over medium heat, brown the ground beef and chicken until fully cooked; season with salt and pepper.
  5. Drain excess oil from the skillet and stir in the marinara sauce; cook briefly to blend flavors.
  6. In a mixing bowl, combine ricotta cheese, parmesan cheese, egg, and parsley until smooth.
  7. Layer the baking dish starting with meat sauce, then noodles, followed by half of the ricotta mixture. Repeat layers twice more.
  8. Add a final layer of noodles topped with shredded mozzarella cheese.
  9. Bake for about 45 minutes until bubbly and golden brown on top.
  10. Let cool for at least 30 minutes before slicing.
